Cowboy beans, so simple! This dish is a throw together meal! My sister in law made it for the boys & Hubba once several years ago. I wasn’t with them at the time, but they told me what was in it. It was a huge hit, so I set out to recreate it, & they love it! You can make this to feed 2. You can make this to feed an army! This is one of the most forgiving recipes in my arsenal! It freezes well, so make extra for another meal!
Choose your measurements of corn, hamburger meat, pintos beans, tomato sauce & taco seasoning. Brown meat. Drain. Combine all ingredients in a pot & simmer til heated through or you’re ready to eat. I typically simmer rapidly for at least 15 mins, then turn it to low to simmer until we’re ready for dinner. Sometimes I cook it all up & throw it in the slow cooker, too. Serve over cornbread! Such an easy & versatile recipe!
