Dilly Dubliner Potatoes
5# potatoes, peeled & cubed
1/2 c milk
4 oz Kerrygold Dubliner cheese, grated or crumbled
1 T dried dill
1 stick of butter
4 cloves garlic, sliced thin
Salt & pepper to taste
Bring a pot of salted water to a boil. Add your potatoes. While your potatoes are cooking, melt butter in a small frying pan over medium heat. Once your butter just starts to brown, add your garlic. Saute garlic until soft & fragrant, about 2 minutes.
When your potatoes are done, strain & mash. Mash in your garlic butter mix, add milk, dill & cheese & stir. Add salt & pepper to taste.
