Chicken With Curried Tomato Sauce
1 large can crushed tomatoes (or fresh equivalent, pureed)
1 t garlic powder
1 t onion powder
1 t salt
1 t raw sugar, rapadura, honey, or choice of sweetener
1 1/2 t curry powder (this is VERY mild, so feel free to add more if you or your crew like it HOT!!
4 T pumpkin puree
8 chicken thighs (skinless, bone-in)
Mix first 7 ingredients in medium saucepot. Bring to a boil, then turn down to simmer. Meanwhile, in another pan (with a thick/heavy bottom), lay your chicken pieces. Pour your hot tomato sauce on top of the chicken & cover with a lid. Bring back to a boil, then turn your heat to medium-low & simmer 30 minutes.
