Yes, taters. That’s just what I call them, but if you want to be fancy, we’ll call them potatoes. Potayto, potahto….
Anyhoo, I made this a bit back when we began getting creative to wage war against an economy that, contrary to mainstream media, is not getting better.
We like it so much, we have it once every week or 2. The taters. Not the economy.
Bacon Taters (or Potatoes)
For each 4-6 people:
1 12-oz package bacon
2 pounds potatoes, diced
1-2 onions, diced
Salt & pepper to taste
Garlic powder, to taste
In a large frying pan, fry bacon until crisp. Remove & set aside. Add onions to hot bacon grease & fry over medium heat until just translucent & beginning to caramelize. While onions are cooking, cut or crumble bacon. Remove from heat & add to bacon crumbles.
In the same pan, add diced potatoes, sprinkled with salt, pepper & garlic powder & fry over medium heat, stirring & flipping them over occasionally until they are cooked through & browned. Once your potatoes are cooked, add your bacon & onions to the potatoes. Stir to combine. Remove from heat.
