Hubba loves wings. He prefers wings a little on the drier side. “Bar wings” are usually a little drier, & those are the ones he likes. However, I prefer something healthy & home cooked over chemical/steroid/antibiotic laden vittles, so I set out to find the perfect ratio of wing to sauce. Thankfully, Hubba is catching on to that train of thought quickly.
I think I found the perfect simple homemade wing.
Hot n Sassy Wings
40 chicken drummettes, wings or a mix
1 stick of butter*
1/2 cup hot sauce*
Preheat your grill. If you have a temperature gauge, mine was at about 460º. Cook the chicken for about 7-10 minutes per side or until the juices run clear. Remove from grill.
Over low heat, melt butter. Remove from heat, & stir in hot sauce. Pour sauce mixture over chicken, & toss to coat. Place chicken pieces in a pan, pour any sauce remaining in the bowl over them & bake at 350º or broil until the sauce is sizzling.
Serve with this amazing homemade ranch dressing!
*For a saucier wing, add more sauce, using a 50/50 ratio of butter to sauce. For a spicier wing, use more hot sauce then butter, & for a milder wing, use more butter than hot sauce.
