1 can sardines (we like these one’s from Trader Joe’s)
4-6 pastured eggs
Oil for greasing the pan
Salt & pepper to taste
If using a conventional oven, preheat to 350º. Drain sardines & place sardines in oiled baking dish. Slightly flake the fish enough to break it up & spread in the pan. Crack eggs into a bowl, whisk & add salt & pepper to taste. Pour over sardines in pan. Bake 20 minutes or until eggs are cooked through. I use my toaster oven for this serves 2 portion, but you can also use a conventional oven.
Serve with fermented veggie of choice. I like Indian Spiced Cauliflower.
